Lemon Curd in the microwave

Some time ago I promised a customer my wife’s microwave lemon-curd recipe. She came back a few times before we got our act together and then gave up on us. In the unlikely event she reads this, here it is!

Lemon Curd (makes two jars)

half cup lemon juice
75g butter
one and a quarter cups castor sugar
2 teaspoons grated lemon rind
4 eggs

1. Put juice and butter in a bowl or glass jug.
2. Microwave on high for one and a half minutes.
3. Whisk in sugar and rind
4. Add eggs and whisk
5. Cook in microwave on high for 7 minutes
6. Whisk for 1 or 2 minutes
7. Pour into 2 hot, dry, clean jars
8. Cover and store in fridge

If it does not set, microwave again for a few more minutes
